3 russet potatoes, sliced into 1/4-inch slices

½ large onion, sliced into rings

6 tablespoons butter

4 tablespoons all-purpose flour

1 teaspoon salt

½ teaspoon fresh ground pepper

1 teaspoon minced garlic

1 teaspoon fresh thyme, chopped

¼ teaspoon garlic powder

4 cups milk

2 1/2 cups shredded cheese (I used smoked gouda)

Pinch of nutmeg

Directions

Preheat ya oven to 375 degrees F.

Butter a 12-inch cast iron skillet or medium casserole dish.

Melt the butter in a medium-size saucepan, over medium heat. Mix in the flour salt, pepper and garlic powder and thyme and whisk for about a minute. Stir in the milk and minced garlic. Cook about 2-3 minutes or until the mixture has thickened. Stir in 2 cups of the cheese all and mix until melted.

Layer 1/2 of the potatoes on the bottom of the dish and then top with the onion slices and ½ of the cheese mixture. Add the remaining potatoes then top with the remaining cheese mixture. Sprinkle with the remaining shredded cheese and then lightly dust with the nutmeg.

Cover with aluminum foil and stick in the oven for 1 hour and fifteen minutes.

Remove the aluminum foil and turn the oven up to 400. Bake 10-15 more minutes or until the top starts to brown. Enjoy.
