Buttermilk Blue Cheese Wedge Salad

The Salad

Serves 4

​

1 head of ice berg lettuce, quartered

2 cups of cherry tomatoes, halved

1 shallot finely diced

8 ounces of duck bacon (pork, turkey or beef bacon may be substituted)

fresh ground pepper to taste

Blue Cheese Dressing

 

1 cup mayonnaise

1/2 cup half and half

½ cup buttermilk

1 teaspoon chopped roasted garlic

1/2 teaspoon Worcestershire sauce

1/2 teaspoon kosher salt

½ teaspoon freshly ground black pepper

1/2 cup blue cheese crumbles

Whisk together all the ingredients until smooth. Place in the refrigerator until ready to use.

Place the bacon in a skillet and cook until crispy. Remove from the pan, drain, chop and set aside.

​

Drizzle one of the wedges of iceberg lettuce with your desired amount of dressing. Top with some of the shallot and cherry tomatoes. Sprinkle with some of the bacon and top with some blue cheese crumbles. Finish with a gratuitous amount of fresh ground black pepper. Enjoy.
