Parmesan Crusted Meatloaf
Ingredients

3 tablespoons butter
1 tablespoon minced garlic
2 large shallots, diced
1/2 cup sliced leeks
1 bell pepper, seeded, small diced
1 egg
1 teaspoon salt
1/2 teaspoon black pepper
1 1/2 cup grated Parmesan
1 cup Italian breadcrumbs
2 pounds ground meat
2 tablespoons Worcestershire sauce

Directions
Preheat oven to 350 degrees F.

Heat the butter in a sauté pan over medium heat and add the shallot, bell pepper and leeks. Season with the salt and pepper. Let the ingredients"turn up" in the oil until just soft and tender, about five minutes. Mix in the garlic and cook for one additional minute. Let cool.

Place the meat in a large bowl (if using different types of meat mix together), then add the Worcestershire, bread crumbs, 1 cup of the parmesan and egg. Mix together using your hands and making sure not to over-mix.

Pack the meat mixture into an oiled loaf pan and sprinkle the remaining parmesan evenly over the top

Lightly cover with foil and bake for approximately 45 minutes or until an instant-read thermometer registers 160 degrees F in the center. Turn on the broiler and broil for an additional 5 minutes. Remove from the oven and let rest for 5 minutes before slicing.
