3 salmon steaks
3 cups chopped tomatoes
1 tablespoon garlic, minced
2 tablespoons fresh oregano, chopped
1/4 cup fresh basil, chopped
1/2 teaspoon black pepper
2 tablespoons olive oil
3 tablespoons butter cut into inch cubes
1/2 teaspoon salt, plus more for seasoning
Avocado or other neutral oil
Place a cast iron skillet in the oven and set to 425.
While the skillet and oven get hot brush both sides of the salmon steaks with avocado oil then salt both sides.
Add the tomatoes garlic, oregano, basil, black pepper, olive oil, butter and salt to a medium sized bowl and stir to combine.
Once the oven is hot remove the skillet and place on the stove over medium-high heat. Place the salmon steaks in the skillet and cook for three minutes. After 3 minutes carefully turn over the steaks making sure not to remove the crust that has formed. Cook for 2 minutes then pour the tomato mixture over them and place in the oven.
Cook for 10-13 minutes or until desired doneness.
Serve over cooked pasta.
